This recipe has deep chocolate flavor, velvety smooth texture in the mouth, and is a delicious low carb keto-friendly dessert that has low net carbs, no added sugar, and rich in healthy fats. Ingredients

  • 2 cups almond milk

  • 1 1/4 cups allulose

  • 6 egg yolks

  • 1/3 cup cocoa powder, Ghirardelli Dutch Processed or Hershey’s Dark

  • 2 cups heavy whipping cream

  • 1 teaspoon vanilla extract

Instructions

  • In a small saucepan, mix the almond milk and allulose; whisk in the egg yolks.

  • Place the saucepan over medium-low heat and cook to 170°F. 
  • Remove from heat and sift cocoa powder over the custard base and whisk into the custard until smooth.
  • Add in the whipping cream and vanilla extract then strain to remove any egg solids and cocoa that did not dissolve.
  • Place in a container and store in refrigerator overnight to chill. 
  • Transfer mixture to an ice cream maker and freeze following the manufacturer’s instructions.

    One 1/2 cup serving has approximately 230 calories, 22gm fat, 3gm carbohydrates, 2gm protein, and 2gm net carbs.
